Description

This Erdbeertiramisu ohne Ei (Strawberry Tiramisu without Egg) is a light and refreshing twist on the classic Italian dessert, perfect for enjoying during strawberry season. It’s made without eggs, making it a safer option for those concerned about raw eggs and also simplifies the preparation process. Layers of ladyfingers soaked in strawberry syrup are alternated with a creamy mascarpone mixture and fresh strawberries, creating a delightful and flavorful dessert.

Ingredients

Scale
  • 500g Fresh Strawberries, hulled and sliced
  • 250g Ladyfingers (Löffelbiskuits)
  • 250g Mascarpone Cheese
  • 200ml Heavy Cream
  • 50g Powdered Sugar
  • 100ml Strawberry Syrup (store-bought or homemade)
  • Optional: Fresh Mint Leaves, for garnish

Instructions

  1. Prepare the Strawberries: Hull and slice the strawberries. Reserve a few for garnish if desired.
  2. Prepare the Strawberry Syrup: If using store-bought syrup, set aside. If making homemade, combine strawberries, sugar, and a little water in a saucepan and simmer until thickened. Let cool.
  3. Whip the Cream: In a large bowl, whip the heavy cream with the powdered sugar until stiff peaks form.
  4. Combine Mascarpone and Cream: Gently fold the mascarpone cheese into the whipped cream until well combined. Be careful not to overmix.
  5. Soak the Ladyfingers: Briefly dip each ladyfinger into the strawberry syrup, ensuring they are moistened but not soggy.
  6. Assemble the Tiramisu: In a serving dish or individual glasses, arrange a layer of soaked ladyfingers.
  7. Add a Layer of Cream: Spread a layer of the mascarpone cream mixture over the ladyfingers.
  8. Add Strawberries: Arrange a layer of sliced strawberries over the cream.
  9. Repeat Layers: Repeat layers of soaked ladyfingers, cream, and strawberries until all ingredients are used, ending with a layer of cream.
  10. Chill: Cover the tiramisu with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld.
  11. Garnish and Serve: Before serving, garnish with fresh strawberries and mint leaves, if desired.

Notes

  • For a richer flavor, use a higher quality mascarpone cheese.
  • Adjust the amount of powdered sugar to your liking, depending on the sweetness of the strawberries and syrup.
  • If you don’t have strawberry syrup, you can use strawberry liqueur or a mixture of strawberry jam and water.
  • The tiramisu can be made ahead of time and stored in the refrigerator for up to 2 days.
