Description

A delicious and easy Scampi and Asparagus Pasta recipe, perfect for a quick weeknight meal. Tender shrimp, fresh asparagus, and perfectly cooked pasta are tossed in a light and flavorful sauce.


Ingredients

  • 1 pound pasta (such as linguine or spaghetti)
  • 1 pound large shrimp, peeled and deveined
  • 1 pound asparagus, trimmed and cut into 1-inch pieces
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1/4 cup lemon juice
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Cook the pasta according to package directions. Reserve about 1 cup of pasta water before draining.
  2. While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the garlic and cook for about 30 seconds, until fragrant.
  3. Add the shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through. Remove the shrimp from the skillet and set aside.
  4. Add the remaining 2 tablespoons of olive oil to the skillet. Add the asparagus and cook for 5-7 minutes, until tender-crisp.
  5. Pour in the white wine and lemon juice, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and cook for 2-3 minutes, until the sauce has reduced slightly.
  6. Add the cooked pasta to the skillet and toss to coat. Add the shrimp back to the skillet, along with the parsley and Parmesan cheese. Toss again to combine.
  7. If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency.
  8. Season with salt, pepper, and red pepper flakes (if using). Serve immediately, topped with extra Parmesan cheese.

Notes

  • For a richer sauce, add a tablespoon of butter to the skillet along with the pasta.
  • You can substitute other vegetables for the asparagus, such as broccoli or zucchini.
  • If you don’t have white wine, you can use chicken broth instead.
  • Adjust the amount of red pepper flakes to your liking, depending on how spicy you want the dish to be.
