Description
A delicious and easy Scampi and Asparagus Pasta recipe, perfect for a quick weeknight meal. Tender shrimp, fresh asparagus, and perfectly cooked pasta are tossed in a light and flavorful sauce.

- 1 pound pasta (such as linguine or spaghetti)
- 1 pound large shrimp, peeled and deveined
- 1 pound asparagus, trimmed and cut into 1-inch pieces
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup dry white wine
- 1/4 cup lemon juice
- 1/4 cup chopped fresh parsley
- 1/4 cup grated Parmesan cheese, plus more for serving
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- Cook the pasta according to package directions. Reserve about 1 cup of pasta water before draining.
- While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the garlic and cook for about 30 seconds, until fragrant.
- Add the shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through. Remove the shrimp from the skillet and set aside.
- Add the remaining 2 tablespoons of olive oil to the skillet. Add the asparagus and cook for 5-7 minutes, until tender-crisp.
- Pour in the white wine and lemon juice, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and cook for 2-3 minutes, until the sauce has reduced slightly.
- Add the cooked pasta to the skillet and toss to coat. Add the shrimp back to the skillet, along with the parsley and Parmesan cheese. Toss again to combine.
- If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency.
- Season with salt, pepper, and red pepper flakes (if using). Serve immediately, topped with extra Parmesan cheese.
Notes
- For a richer sauce, add a tablespoon of butter to the skillet along with the pasta.
- You can substitute other vegetables for the asparagus, such as broccoli or zucchini.
- If you don’t have white wine, you can use chicken broth instead.
- Adjust the amount of red pepper flakes to your liking, depending on how spicy you want the dish to be.
