Description
A creamy and flavorful asparagus cream soup made easily in the Thermomix. This recipe is perfect for a quick and delicious spring meal.

- 500g green asparagus, peeled and chopped
- 1 onion, chopped
- 20g butter
- 700ml vegetable broth
- 200ml cream
- Salt and pepper to taste
- A pinch of nutmeg
- Fresh parsley, chopped (for garnish)
Instructions
- Place the onion and butter in the Thermomix bowl and chop for 3 seconds on speed 5.
- Sauté for 3 minutes at 120°C on speed 1.
- Add the asparagus and vegetable broth to the Thermomix bowl.
- Cook for 20 minutes at 100°C on speed 1.
- Puree the soup for 30 seconds on speed 8, gradually increasing the speed.
- Add the cream, salt, pepper, and nutmeg.
- Mix for 10 seconds on speed 3.
- Garnish with fresh parsley before serving.
Notes
- For a vegan version, replace the butter with olive oil and the cream with plant-based cream.
- Adjust the amount of vegetable broth to your desired consistency.
- You can use white asparagus instead of green asparagus.
- If you prefer a smoother soup, strain it through a fine-mesh sieve after pureeing.
