- 500g green asparagus, trimmed
- 250g pasta (e.g., farfalle, fusilli)
- 1 shallot, finely diced
- 2 tablespoons olive oil
- 3 tablespoons white wine vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon honey or maple syrup
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta according to package directions until al dente. Drain and rinse with cold water to cool.
- While the pasta is cooking, prepare the asparagus. Snap off the tough ends and cut the asparagus into 2-3 cm pieces.
- Steam, boil, or grill the asparagus until tender-crisp (about 5-7 minutes). If boiling, drain well.
- In a small bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, honey/maple syrup, salt, and pepper to make the dressing.
- In a large bowl, combine the cooked pasta, asparagus, and diced shallot.
