A delicious and easy pasta dish featuring white asparagus, perfect for a light spring meal.

- 500g white asparagus, peeled
- 250g pasta (e.g., spaghetti, linguine)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 cup white wine
- 1/2 cup vegetable broth
- 1/4 cup grated Parmesan cheese
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta according to package directions. Reserve about 1/2 cup of pasta water before draining.
- While the pasta is cooking, prepare the asparagus. Snap off the tough ends and cut the spears into 1-inch pieces.
- Heat the olive oil in a large skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute.
- Add the asparagus to the skillet and cook until tender-crisp, about 5-7 minutes.
- Pour in the white wine and let it simmer for 2 minutes, scraping up any browned bits from the bottom of the pan.
- Add the vegetable broth and bring to a simmer.
- Stir in the cooked pasta, Parmesan cheese, and butter. Toss to coat. Add pasta water as needed to create a creamy sauce.
- Season with salt and pepper to taste.
- Garnish with fresh parsley and serve immediately.
Notes
- For a richer sauce, add a splash of cream at the end.
- You can substitute green asparagus if white asparagus is not available.
- Add some cooked shrimp or chicken for a heartier meal.
